Creamy spinach and bacon pasta

Full ingredients list:
- 2 3/4 cups penne
- 1 bunch English spinach, washed, trimmed
- 225g middle cut bacon, trimmed, sliced
- 4 green onions, sliced
- 375ml can light evaporated milk
- 3 teaspoons cornflour
- 1 punnet cherry tomatoes, halved
- 1 Lebanese cucumber, diced

Instructions and steps:
Step 1 Cook penne according to packet directions. Drain and return to saucepan. In a separate saucepan or microwave, steam spinach until tender. Squeeze out moisture, chop and add to pasta.
Step 2 Meanwhile, cook bacon in a frying pan for 4–5 minutes over medium heat. Add onions and cook for another 2 minutes.
Step 3 Combine 1/4 cup evaporated milk with cornflour. Add to bacon, with the remaining milk. Stir until mixture thickens. Add pasta and spinach to pan and stir until heated through. Serve with a side salad of cherry tomatoes and diced cucumber.
Mix 2 tablespoons tomato paste in with the cornflour and evaporated milk for a flavour boost. Add in frozen peas and carrots too.
