- 5 large zucchinis, sliced diagonally into 1cm slices
- 2 tablespoons lemon juice
- 1/3 cup reduced-fat feta, crumbled
- 2 tablespoons freshly shredded mint

Instructions and steps:
Step 1 Preheat chargrill pan to high. Spray zucchini with oil and grill for 2 minutes each side, or until lightly charred and tender.
Step 2 Place zucchini on a serving plate. Drizzle with lemon juice and season with pepper. Toss to combine. Sprinkle with feta and mint. Serve immediately.
