Choy sum with soy and ginger dressing

Full ingredients list:
- 2 bunches choy sum
- 3 tablespoons reduced-salt soy sauce
- 2 teaspoons freshly grated ginger
- 1 tablespoon sesame oil

Instructions and steps:
Step 1 Remove stems from choy sum, then cut the stems and leaves in half.
Step 2 Blanch or steam stems and leaves until tender-crisp. Rinse under cold running water and drain well. Arrange choy sum on a serving platter.
Step 3 Heat remaining ingredients in a saucepan over high heat. Carefully pour hot dressing over choy sum.
Make it gluten free: Use gluten-free tamari instead of soy sauce.
