Full ingredients list:
- 500g chicken mince
- 1 tablespoon lemongrass or coriander paste
- 1 red onion, finely chopped
- 1 teaspoon cumin seeds
- cooking oil spray
- 1 cup canned beetroot, diced
- 2 tablespoons fresh coriander
- 1/2 lime, juiced
- 4 wholemeal pitas, halved
- salad, to serve
- 4 tablespoons low-fat yoghurt

Instructions and steps:
Step 1 Combine mince, paste, half the onion and cumin in a bowl.
Step 2 Form mixture into 16 balls or patties. Spray a frying pan with oil and cook over medium heat until browned and cooked through (about 10 minutes).
Step 3 Meanwhile, make salsa: mix remaining onion, beetroot, coriander and juice in a small bowl.
Step 4 Serve balls in pita with salad, yoghurt and salsa.
Serve mini chicken patties with stir-fried vegetables and vermicelli noodles. Drizzle with sweet chilli sauce and serve hot.
Make your own mince by processing 500g skinless chicken fillets in a food processor.
