Cauliflower with currants and almonds

Full ingredients list:
- 1 head cauliflower, trimmed, cut into small florets
- 2 teaspoons olive oil
- 1/2 cup flaked almonds
- 1/2 cup chopped flat-leaf parsley
- 4 tablespoons currants

Instructions and steps:
Step 1 Blanch cauliflower in boiling water for 4–5 minutes, until tender-crisp. Drain well.
Step 2 Heat oil in a frying pan over medium-high heat. Add almonds and cook, stirring, for 2 minutes, until just brown. Add cauliflower and stir for 2 more minutes. Stir in parsley and currants. Season with pepper, to taste.
