Step 1 Preheat oven to 180ºC. Spray a large baking dish with oil. Cook pasta according to packet instructions. Drain well. Return to saucepan and set aside.
Step 2 Meanwhile, spray a large frying pan with oil and place over medium heat. Add onion, carrot, zucchini and capsicum and cook, stirring occasionally, for 6–7 minutes, until soft. Add mince and cook for 5–6 minutes, breaking up with a wooden spoon, until browned. Add pasta sauce and simmer for 5 minutes.
Step 3 Add mince mixture to pasta and stir until well combined. Pour mixture into prepared dish and firmly press into dish.
Step 4 In a small bowl, whisk together yoghurt, egg and feta, until well combined. Pour evenly over pasta, spreading to cover completely. Bake for 25–30 minutes, until top is golden. Remove from oven and stand for 10 minutes before serving. Serve with a green salad.
