Full ingredients list:
- 450g packet 2-minute brown rice
- 2 rashers lean bacon, chopped
- 2 green onions, finely chopped
- 410g can chopped tomatoes with garlic and basil
- 8 portobello mushrooms
- 5 tablespoons grated parmesan
- 4 tablespoons breadcrumbs
- cooking oil spray
- chopped parsley, to serve
- green salad, to serve

Instructions and steps:
Step 1 Preheat oven to 180ºC. Line a baking tray with foil. Cook rice according to packet instructions. Meanwhile, grill or pan-fry bacon.
Step 2 Remove stalks from mushrooms and chop finely. Combine with bacon, rice, onion, tomatoes and mushroom stalks.
Step 3 Place mushroom caps on tray and fill with rice mixture.
Step 4 In a bowl, combine cheese and breadcrumbs. Top rice with cheese mixture. Spray with oil and bake for 15 minutes, until mushrooms are tender and cheese has melted. Garnish with parsley and serve with a green salad.
Make these mushrooms vegetarian, by omitting the bacon and adding sun-dried tomatoes and basil, oregano or thyme.
