Full ingredients list:
- 4 cups chopped rhubarb
- 5 tablespoons loosely packed brown sugar
- 1 sachet Weight Watchers vanilla custard
- 2 x 150g vanilla crème Frûche

Instructions and steps:
Step 1 Cook rhubarb with 4 tablespoons water over medium heat for 10 minutes, until tender. Stir in sugar and cool.
Step 2 Make custard according to packet instructions, then cool.
Step 3 Add rhubarb and Frûche to custard and mix. Spoon into serving bowls. Chill for at least 1 hour before serving.
Only use the red stalks for cooking – the leaves are poisonous and must be discarded.
