Full ingredients list:
- 1 brown onion, finely chopped
- 1 clove garlic, minced
- 100g 97% fat-free ham, chopped
- 400g can no-added-salt chopped tomatoes
- 2 x 400g cans cannellini beans, rinsed
- 8 slices multigrain toast
- chopped parsley, to serve
- green salad, to serve

Instructions and steps:
Step 1 Spray a medium saucepan with oil and place over medium heat. Add onion and garlic to pan and cook for 3 minutes.
Step 2 Stir in tomatoes, ham and 1 cup water. Bring to the boil. Reduce heat to low and simmer, stirring occasionally, for 5 minutes.
Step 3 Add cannellini beans and stir to combine. Simmer, stirring occasionally, for 10 minutes until sauce thickens slightly. Serve on toast, season to taste and garnish with parsley. Serve with a salad.
Add a little kick with a teaspoon of Mexican chilli powder when adding the tomatoes. Sprinkle with grated cheese to serve.
