Full ingredients list:
- 1 teaspoon peanut oil, plus extra for brushing
- 375g lean minced pork
- 1/4 Chinese cabbage, shredded
- 100g can corn kernels
- 2 small carrots, grated
- 4 green onions, thinly sliced
- 1 tablespoon reduced-salt soy sauce
- 275g packet spring roll wrappers
- sweet chilli sauce, to serve

Instructions and steps:
Step 1 Preheat oven to 200ºC. Grease a baking tray and set aside. Heat oil in a frying pan over medium-high heat. Cook pork for 4 minutes, until just browned. Add vegies and soy sauce, cook for 2 minutes, then remove from heat.
Step 2 Lay 1 wrapper with a point facing towards you. Place 2 tablespoons of mixture onto pastry in a log shape. Fold pastry over filling once. Fold in side corners, brush far corner with water, then roll up tightly to ‘paste’ shut. Repeat with remaining filling and pastry.
Step 3 Place spring rolls onto prepared tray. Brush with oil and bake for 20 minutes, until crisp.
Enjoy this treat in moderation – the kilojoules add up pretty quickly!
