Full ingredients list:
- 500g skinless chicken breast, cut into strips
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons paprika
- 1 teaspoon cayenne pepper
- cooking oil spray
- 2 capsicums (any colour), sliced
- 1 red onion, sliced
- 4 large tortillas
- 300g jar salsa
- 1 small ripe avocado, diced
- chopped coriander, to garnish

Instructions and steps:
Step 1 In a large bowl, toss chicken with spices, until coated.
Step 2 Spray a non-stick pan with oil and cook chicken over medium heat for 6–8 minutes, or until golden. Remove and keep warm.
Step 3 Spray pan with more oil and cook capsicums and onion for 5 minutes, until softened.
Step 4 Warm tortillas and cut into three wedges. To make stacks: top one piece of tortilla with a large spoonful of salsa, a few pieces of chicken, vegies and diced avocado. Add another tortilla wedge and repeat process. Top with last tortilla wedge.
Step 5 Garnish with coriander and serve with a green salad.
