Full ingredients list:
- 1 tablespoon reduced-salt soy sauce
- 1 tablespoon hoisin sauce
- 2 teaspoons cornflour
- 6 eggs, whisked
- 2 x 85g packets Mi Goreng noodles, cooked, drained
- 4 green onions, thinly sliced
- 100g 97% fat-free ham, sliced
- 200g prawns, peeled
- cooking oil spray
- steamed Asian greens, to serve

Instructions and steps:
Step 1 Combine 1/2 cup water, soy and hoi sin sauces and cornflour in a saucepan over medium heat. Stir until mixture boils, then reduce heat and simmer for 2 minutes. Keep warm.
Step 2 In a bowl, combine eggs, noodles, onion, ham and prawns. Spray a frying pan with oil and cook 1/4 cupfuls of noodle mixture over medium heat for 2–3 minutes on each side. Remove and cover. Repeat with remaining mixture. To serve, stack 3 omelettes onto each plate and spoon over sauce. Serve with Asian greens.
