Full ingredients list:
- 1/2 cup (125ml) skim milk
- 2 eggs
- 1 cup self-raising flour
- 75g reduced-fat feta, crumbled
- 2 cups frozen peas, thawed
- 2 large zucchinis, coarsely grated, squeezed of excess moisture
- 1/4 cup chopped mint
- 1 teaspoon finely grated lemon zest
- lemon wedges, to serve
- large green salad, to serve

Instructions and steps:
Step 1 Whisk together milk and eggs in a large bowl. Gradually whisk in flour, until smooth. Stir through feta, peas, zucchini, mint and lemon zest.
Step 2 Spray a large frying pan with oil and place over medium-high heat. Spoon 1/4 cup of mixture per fritter into the pan, 3 fritters at a time. Cook for 3 minutes each side, or until golden and cooked through. Continue with remaining batter to make 12 fritters, spraying pan with more oil, if necessary. Serve with lemon wedges and a large green salad.
To add a little colour, try substituting 2 large carrots for the zucchinis.
