Step 1 Heat half the oil in a frying pan over medium heat. Gently fry onion, garlic, bay leaf and herbs for several minutes, until onion is translucent. Discard bay leaf.
Step 2 In a large bowl, combine thyme, lentils, egg, flour, oats and tomato paste with fried onion mix.
Step 3 Heat remaining oil in pan. Spoon 1/4 of lentil mix into pan and flatten slightly with spoon. Lightly fry both sides until burgers are dark golden, about 4–6 minutes. Remove from pan and place on paper towels to absorb any excess oil. Repeat with remaining lentil mixture.
Step 4 Serve on a wholegrain bun with salsa, hommous, tomato, lettuce and chopped fresh parsley.
