Full ingredients list:
- 2 cloves garlic, crushed
- 1 tablespoon grated ginger
- 1-2 red chillies, finely chopped
- 1 tablespoon peanut oil
- 500g lean pork mince
- 2 kaffir lime leaves, finely chopped
- 1 lime, zested and juiced
- 2 tablespoons fish sauce
- 1 tablespoon caster sugar
- 2 small heads lettuce, broken into cups
- 1 cups rice, cooked
- stir-fried vegetables, to serve

Instructions and steps:
Step 1 Process garlic, ginger and half the chilli in a food processor to make a rough paste.
Step 2 Heat oil in a large frying pan or wok over high heat. Add paste and stir-fry for 1 minute.
Step 3 Add pork mince. Cook, stirring, for 3-4 minutes until pork browns. Add lime leaves, lime zest and juice, fish sauce and sugar. Cook for a further 2 minutes.
Step 4 Remove from heat. Spoon into lettuce cups and top with remaining chilli. Serve with rice and stir-fried vegetables.
Including chopped coriander leaves and a small handful of crushed peanuts will add even more flavour to this dish.
This recipe is not suitable for those following a low-sodium diet.
