- 450g (about 12) Brussels sprouts, trimmed, halved
- 1 tablespoon olive oil
- 4 shallots (French or brown shallots), thinly sliced
- 3 rashers rindless shortcut bacon, thinly sliced

Instructions and steps:
Step 1 Boil, steam or microwave sprouts until just tender. Drain and set aside.
Step 2 Heat oil in a frying pan over medium-high heat. Cook shallots and bacon, stirring, for 5 minutes, until shallots soften. Add sprouts and cook for a further 2–3 minutes, until heated through.
