Brown rice with spinach

Full ingredients list:
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 4 cloves garlic, finely chopped
- 1 bunch spinach, washed, chopped
- 1 teaspoon reduced-salt vegetable stock powder
- 1 pinch cayenne pepper
- 1 cup uncooked brown rice
- 3 cups water

Instructions and steps:
Step 1 Place a saucepan over medium heat. Add olive oil, onion and garlic. Cook until onion is transparent.
Step 2 Add chopped spinach. Sprinkle with stock powder and cayenne pepper, then add brown rice. Stir until combined.
Step 3 Add 3 cups water, stir well. Simmer, covered, for 40 minutes, or until rice is cooked. (If water has evaporated and rice is still hard, add a little more water).
