- 400g apple or rhubarb (or mix of both) cut into bite-sized pieces
- 1 tablespoon grated fresh ginger
- 1 orange, rind finely grated, juiced
- 3/4 cup caster sugar
- 1 cup frozen raspberries
- 2 egg whites

Instructions and steps:
Step 1 Preheat oven to 180ºC. Place apple and/or rhubarb in a saucepan with ginger, orange rind and 1/3 cup sugar. Cover. Cook on low heat for 2–3 minutes, adding orange juice as necessary. Stir in raspberries and spoon mixture into 4 ovenproof ramekins.
Step 2 Whisk egg whites and remaining sugar until stiff. Top each ramekin with a large spoonful of meringue mixture. Bake for 8–10 minutes or until lightly golden. Serve.
