- 12 slices fruit bread
- 2 tablespoons reduced-fat spread
- cooking oil spray
- 1 cup diced cooked apple
- 1/2 teaspoon ground cinnamon
- 3 eggs
- 2 cups skim milk
- 3 tablespoons soft brown sugar

Instructions and steps:
Step 1 Apply a thin layer of spread to bread slices. Spray a large baking dish lightly with oil. Arrange half the slices spread-side up in dish.
Step 2 Arrange apples on top of bread. Sprinkle with half the cinnamon. Cover with remaining bread, spread-side down.
Step 3 Beat eggs and milk together. Pour over bread. Press down lightly. Sprinkle with remaining cinnamon and sugar.
Step 4 Leave to stand for 40 minutes before baking at 180ºC for 30 minutes. Serve warm.
