Full ingredients list:
- cooking oil spray
- 4 cups cooked pasta (any shape)
- 150g lean ham, shredded
- 2 tablespoons diced red capsicum
- 1 1/2 cups leftover vegetables
- 1/2 cup tomato passata
- 4 eggs
- 1/4 cup skim milk
- 150g low-fat cottage cheese with garlic and herbs
- chopped fresh parsley, to garnish

Instructions and steps:
Step 1 Preheat oven to 180ºC. Spray a baking dish with oil and set to one side.
Step 2 Place pasta into a large bowl. Add ham, capsicum, vegetables, and passata.
Step 3 In a separate bowl, beat eggs together with milk and soft cheese. Add to pasta. Toss to combine well.
Step 4 Spoon into prepared dish. Bake for 25 minutes until golden. Garnish with parsley, as desired.
Tuna and sweetcorn can also work well in this dish.
