Full ingredients list:
- 450g chicken mince
- 1/2 cup couscous (not cooked)
- 1/2 onion, very finely chopped
- 2 cloves garlic, crushed
- 1/4 cup finely chopped parsley
- 1/4 cup finely chopped coriander
- 1 tablespoon curry powder
- 2 tablespoons sweet chilli sauce
- olive oil spray
- 1/2 lemon, juiced
- green salad, to serve

Instructions and steps:
Step 1 Place mince into a large bowl. Add all remaining ingredients, except olive oil spray and lemon juice. Mix well, ensuring all ingredients have been combined evenly with the mince. For best results, use your hands.
Step 2 Divide mixture into eight equal portions and form into sausage shapes. Refrigerate for as long as possible – preferably overnight in a sealed container. The following day, thread the koftas onto dampened wooden skewers or metal skewers. Preheat the barbecue to medium-hot.
Step 3 Evenly spray koftas with a little oil and cook for 6–7 minutes, turning once, or until thoroughly cooked through. Drizzle with lemon juice while still hot, then serve with Pineapple salsa, Apple raita and a green salad.
