Full ingredients list:
- Mango relish
- 425g can mango slices, drained, finely chopped
- 2 tablespoons sweet chilli sauce
- 1/4 cup fresh coriander, chopped
- 1/3 cup fresh mint, chopped
- 2 tablespoons plain flour
- 2 eggs
- 1 tablespoon curry powder
- 1/2 teaspoon turmeric
- 3 tablespoons low-fat Greek-style yoghurt
- 2 medium onions, thinly sliced
- 2 tablespoons canola oil

Instructions and steps:
Step 1 Make Mango relish: combine relish ingredients in a bowl. Cover and refrigerate.
Step 2 Combine flour, eggs, curry powder, turmeric and yoghurt in a large bowl. Add onion and stir, making sure onion is well coated.
Step 3 Heat oil in a large frying pan over medium heat. Put table¬spoons of fritter mixture into the pan, pressing down slightly with a spatula. Once brown, flip over and cook the other side. Remove to a plate covered in paper towels. Serve with mango relish.
