Full ingredients list:
- 1 tablespoon canola oil
- 2 teaspoons mustard seeds
- 1/2 teaspoon turmeric
- 2cm piece fresh ginger, grated
- 2 cups cooked basmati rice
- 3 tablespoons chopped cashew nuts
- 1/2 lemon, juiced
- 1/4 cup coriander leaves

Instructions and steps:
Step 1 Heat oil in a large frying pan over medium-high heat. Add mustard seeds and cook, stirring until they pop.
Step 2 Add turmeric and ginger and stir for 30 seconds. Add rice, cashews and lemon juice and stir until well heated. Garnish with coriander leaves and serve.
