Step 1 Place steaks into a flat non-metallic dish. In a small bowl, combine garlic, oil, vinegar, mustard and herbs. Spoon mixture over steaks, turning to ensure they are coated evenly. Cover and refrigerate for at least 1 hour (or overnight).
Step 2 Preheat barbecue to high. Cook steak over high heat and turn only once until cooked to your liking (see tips).
Step 3 Place steaks onto a warm plate and cover with foil to rest for a few minutes. Serve with Warm potato salad.
For the perfect steak, make sure the barbecue is very hot. If you are not marinating the meat, spray each steak with a little oil. Use tongs to turn steak during cooking as piercing it with a fork will allow the juices to escape. Always rest the meat after cooking to allow juices to settle.
