- 4 x 150g sirloin steaks
- 2 cloves garlic, crushed
- 1 tablespoon olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon wholegrain mustard
- 3 tablespoons chopped parsley or tarragon

Instructions and steps:
Step 1 Place steaks into a flat non-metallic dish. In a small bowl, combine garlic, oil, vinegar, mustard and herbs. Spoon mixture over steaks, turning to ensure they are coated evenly. Cover and refrigerate for at least 1 hour (or overnight).
Step 2 Preheat barbecue to high. Cook steak over high heat and turn only once until cooked to your liking (see tips).
Step 3 Place steaks onto a warm plate and cover with foil to rest for a few minutes. Serve with Warm potato salad.
Tips for cooking steak
For the perfect steak, make sure the barbecue is very hot. If you are not marinating the meat, spray each steak with a little oil. Use tongs to turn steak during cooking as piercing it with a fork will allow the juices to escape. Always rest the meat after cooking to allow juices to settle.
How long should you cook steak for?
- Rare: Cook for 2 minutes on either side
- Medium-rare: Cook for 3 minutes on either side
- Medium: Cook for 4 minutes on either side
- Well-done: Cook for 5 minutes on either side
