Full ingredients list:
3 cups broccoli florets
olive oil spray
500g pack frozen green or king prawns, defrosted, deveined, with heads removed
270g can light coconut milk
1/2 teaspoon dried lemongrass
2 tablespoons unsalted peanuts, crushed
1/2 cup fresh basil, toughly torn
2 cups cooked rice, to serve

Instructions and steps:
Step 1Cook broccoli in boiling water until tender. Drain. Set aside.
Step 2Heat oil in a non-stick pan. Add prawns and cook for 2 minutes until just cooked. Stir in coconut milk. Bring to a simmer. Add lemongrass and cook for 2 more minutes. Add peanuts.
Step 3Add torn basil and broccoli to pan. Stir gently to coat in sauce. Serve with rice.
