Full ingredients list:
- 3 eggs
- 5 thin slices prosciutto
- 500g skinless chicken breast fillets
- 2 small baby cos lettuce, leaves separated, washed and dried
- 1/2 cup 97% fat-free Caesar salad croutons
- 1/3 cup 99% fat-free Caesar dressing

Instructions and steps:
Step 1 Place eggs into a saucepan of cold water. Bring to boil. Reduce heat and simmer for 4 minutes. Drain. Crack shells and stand in cold water. Peel and slice.
Step 2 Heat grill on high. Put prosciutto onto a baking tray. Place under grill and cook for 2-3 minutes on each side or until crisp. Allow to cool, then break into pieces.
Step 3 Heat a non-stick frying pan over medium heat. Spray chicken breast fillets with olive oil. Add 2 chicken breasts to pan and cook 3-4 minutes on each side or until cooked through. Transfer to a plate. Cook remaining chicken fillets. Thinly slice or shred chicken.
Step 4 Arrange cos leaves on a large platter. Top with shredded chicken, prosciutto, eggs and croutons. Drizzle with dressing and serve.
If you can't find any prosciutto in the supermarket, replace it with 4 rashers of lean, short-cut bacon instead.
