Pasta with bacon, peas and mint

Full ingredients list:
- 350g wholemeal spaghetti
- 1 cup frozen peas, thawed
- olive oil spray
- 1 onion, finely chopped
- 175g short-cut bacon, trimmed, cut into thin strips
- 2 cloves garlic, crushed
- 1 large zucchini, grated
- 1 teaspoon grated lemon zest
- 1/3 cup (80ml) light cream
- 1/4 cup chopped fresh mint leaves

Instructions and steps:
Step 1 Cook pasta, adding peas for last 2 minutes of cooking time. Drain, reserving 1/4 cup liquid. Return pasta and peas to pan.
Step 2 Heat a large frying pan over high heat. Spray with olive oil spray. Cook onion until soft. Add bacon and cook, stirring, until crisp. Add garlic and zucchini and cook for 2 minutes. Add reserved liquid, zest and cream. Simmer 2–3 minutes. Toss pasta and mint in creamy mixture. Season with pepper. Serve.
Replace bacon with smoked salmon. Omit mint and add one tablespoon finely chopped fresh dill.
