Full ingredients list:
- 4 small onions, peeled
- 4 wooden skewers, soaked
- 300g barramundi or gemfish, cut into 2.5cm cubes
- 6 button mushrooms
- 1/2 red capsicum, cut into 2.5cm pieces
- 1/2 teaspoon parsley
- 2 cups cooked rice, to serve
- 1 tablespoon olive oil
- 1/2 cup lemon juice
- 1/4 teaspoon thyme
- 1/4 teaspoon marjoram

Instructions and steps:
Step 1 Boil whole onions in a saucepan for 15 minutes. Drain. Thread on skewers with fish, mushrooms and capsicum.
Step 2 Mix Marinade ingredients. Drizzle on kebabs, coating well. Cover and refrigerate for 1 hour.
Step 3 Grill or barbecue kebabs for 10 minutes. Serve on a bed of rice, sprinkled with parsley.
