Spaghetti with feta, zucchini and mint

Full ingredients list:
- 400g spaghetti
- 500g zucchini, trimmed, thinly shredded lengthways
- 150g reduced-fat feta, crumbled
- 1 bunch mint, leaves picked
- 2 tablespoons pine nuts, toasted

Instructions and steps:
Step 1 Cook pasta in a large saucepan of boiling water according to packet directions. Drain and return to saucepan.
Step 2 Meanwhile, bring a large frying pan of water to the boil. Add zucchini and cook for 1-2 minutes or until just tender. Drain. Add zucchini, feta, mint leaves and pine nuts to pasta. Toss until well combined. Serve immediately.
For extra flavour, add lemon zest and a drizzle of lemon-infused oil.
