Step 1 Preheat oven to 180°C. Grease and line an 8cm deep x 8cm x 20cm loaf pan. Baking paper should overhang by 3cm around all sides.
Step 2 Using an electric mixer beat spread, sugar and vanilla until light and fluffy. Add eggs, one at a time, beating well after each.
Step 3 Using a large metal spoon, gently fold through flour and bicarbonate of soda. Add banana and buttermilk. Gently fold through batter. Spoon into prepared loaf pan. Smooth top of loaf with the back of a wet spoon.
Step 4 Bake for 60-70 minutes, or until golden and a skewer inserted into the centre comes out clean. Allow 5 minutes to cool in pan. Using paper overhang, carefully turn out onto a wire rack. Serve warm or cool, cut into slices.
