Full ingredients list:
- olive oil spray
- 1 onion, finely chopped
- 1 small bunch coriander, leaves chopped, and 1 tablespoon chopped coriander root
- 420g can kidney beans, rinsed, drained
- 425g tuna in spring water, drained
- 400g can chopped tomatoes
- 1 tomato, chopped
- 4 tortilla wraps
- 1 avocado, roughly chopped

Instructions and steps:
Step 1 Spray a frying pan with oil and place over medium-high heat. Add onion and coriander root and cook until onion is softened. Add beans and tuna. Cook for two minutes, stirring. Add the tomatoes and simmer on low heat for 20 minutes.
Step 2 Heat tortillas in microwave for 30 seconds. Divide tuna mixture evenly between wraps, topping with avocado and coriander leaves. Wrap up and serve immediately.
