Full ingredients list:
- 600g cooked long-grain rice
- 2 eggs, beaten
- 1 1/4 cups tomato passata
- 1 teaspoon dried mixed herbs
- 1/2 cup grated reduced-fat cheese
- 150g cooked chicken, chopped
- 2 cups assorted cooked vegetables
- olive oil spray
- fresh basil, to serve

Instructions and steps:
Step 1 Preheat oven to 180ºC. Place rice into a large bowl. Add eggs, 1/4 cup passata, herbs and a third of the cheese and mix well.
Step 2 Divide mixture into four even portions. Using your hands, flatten and shape into pizza bases. Place on a lightly greased baking tray. Bake for 10 minutes, or until lightly golden.
Step 3 Remove from oven and top with meat, vegies, remaining cheese and passata. Spray with a little oil and bake for 10 more minutes, or until cheese has melted. Serve with fresh basil.
