Sausage, tomato and capsicum pasta

Full ingredients list:
- 350g dried penne
- 500g lean beef sausages
- 1 red capsicum, thinly sliced
- 2 cups cherry tomatoes
- 4 cups rocket or baby spinach
- 1/2 lemon, juiced and zested
- 1 tablespoon reduced-fat sour cream
- 1/4 cup fresh parsley, chopped
- 1 tablespoon parmesan, to garnish

Instructions and steps:
Step 1 Cook pasta following packet directions. Drain, reserving half a cup of pasta water. Spray with a little oil and set aside.
Step 2 Chop sausages into bite-sized pieces. Place a large pan over medium-high heat and spray with oil. Add sausages and stir-fry until browned and cooked through. Add capsicum and cook for 5 more minutes.
Step 3 Add cherry tomatoes and stir-fry for another 5 minutes, then add pasta, rocket, lemon juice, zest and sour cream. Stir well to combine, adding some pasta water to make a sauce.
Step 4 Garnish with parsley and parmesan.
