Full ingredients list:
- 4 teaspoons olive oil
- 5 teaspoons dukkah
- 600g assorted roast vegetables
- fresh parsley, chopped, to serve

Instructions and steps:
Step 1 Heat olive oil over medium heat in a frying pan. Add dukkah. Cook for 3 minutes.
Step 2 Add vegetables and heat through, tossing to coat evenly. Serve sprinkled with parsley.
We used a combination of potatoes, zucchini, carrots, cauliflower and pumpkin.
