Full ingredients list:
- 350g penne pasta
- 2 medium heads broccoli, chopped into florets
- olive oil spray
- 2 red onions, thinly sliced
- 2 teaspoons Tuscan seasoning
- 70g baby spinach, roughly torn
- 400g can chopped tomatoes with basil
- 3 tablespoons parmesan cheese
- fresh basil, to serve

Instructions and steps:
Step 1 Cook pasta in a large saucepan following packet directions. Add broccoli for the last three minutes of cooking time. Drain and return to saucepan.
Step 2 Meanwhile, spray a non-stick frying pan with oil. Add onions. Cook over medium heat, stirring, until lightly browned. Stir in seasoning and spinach. Cook until spinach wilts and then stir through tomatoes.
Step 3 Add sauce to pasta and combine. Place over medium heat, stirring, until heated through.
Step 4 Divide among bowls. To serve, top with parmesan cheese and fresh basil.
Replace the broccoli with shredded snow peas, the parmesan for bocconcini, and add lean bacon. Top with flat-leaf parsley.
