Hearty and healthy beef enchiladas

Full ingredients list:
- 400g lean beef mince
- 300g jar salsa
- 400g can borlotti beans
- 4 flour tortillas
- 1/2 cup grated reduced-fat cheese
- 1 small (or 1/2 large) ripe avocado
- mixed salad, to serve

Instructions and steps:
Step 1 Cook mince in a non-stick pan until evenly browned. Add salsa and cook for a few more minutes, until warmed.
Step 2 Drain and rinse beans. Add to mince. Heat through.
Step 3 Warm the tortillas under the grill for about one minute. Add one quarter of the filling to the centre of each tortilla. Wrap and secure with a toothpick.
Step 4 Sprinkle with cheese. Place under the grill and cook until cheese has melted and golden. Garnish with diced avocado. Serve with mixed salad.
- Cut tortillas into strips and bake until crisp. Serve with other ingredients as ‘nachos’.
- For extra flavour, add yoghurt and coriander.
