Full ingredients list:
- 1/2 cup medium-grain brown rice
- 2 x 170g Atlantic salmon fillets, skin on
- 2 lemons, halved
- 1 bunch Asian greens, roughly chopped
- 1/2 bunch chives, finely chopped
- 2 green onions, very finely chopped

Instructions and steps:
Step 1 Place rice in a medium saucepan with 1 cup cold water. Bring to the boil. Reduce heat. Cover and simmer for 25 minutes. Remove from heat and set aside, covered, for a further 10 minutes.
Step 2 Meanwhile, heat a non-stick frying pan over medium-high heat. Cook salmon fillets for 3 minutes, skin-side down. Reduce to low-medium heat. Squeeze juice from a lemon half over salmon and cook for a further 5 minutes. Turn over. Squeeze juice from another lemon half and cook 5 minutes more.
Step 3 Meanwhile, steam greens for 3–4 minutes. Transfer to plate. Squeeze juice from another lemon half over greens. Keep warm. Remove pan from heat, leaving salmon in frying pan to keep warm.
Step 4 Mix chives, green onion and juice from last lemon half through rice. Serve with salmon and Asian greens.
