Full ingredients list:
1 tablespoon canola oil
1 large onion, finely chopped
2 cloves garlic, finely crushed
1 tablespoon grated fresh ginger
2 tablespoons mild curry powder
600g lean beef, cubed
420g can chopped tomatoes
1 cup reduced-salt beef stock
1 cup light coconut milk
500g new potatoes, boiled, drained, halved
2 tablespoons chopped fresh parsley

Instructions and steps:
Step 1 Heat oil in a large frying pan. Add onion and cook over medium heat until softened. Add garlic and ginger. Cook for 2–3 minutes. Stir in curry powder and cook for 1 minute.
Step 2 Add beef. Cook, stirring over a high heat, until meat is well coated with spice mixture and browned all over.
Step 3 Add tomatoes and stock. Cover and simmer for 1–1 1/4 hours, or until meat is tender.
Step 4 Add coconut milk and potatoes. Cook for 5 minutes. Serve sprinkled with parsley and with warmed naan or pita bread.
