- 4 medium zucchinis, halved
- 100g 97% fat-free shaved ham, finely chopped
- 1 large carrot, grated
- 200g extra light tasty cheese

Instructions and steps:
Step 1 Preheat oven to 180ºC. Scoop out zucchini flesh from each half. Set aside flesh.
Step 2 Place zucchini ‘boats’ in a single layer in a baking-paper lined baking tray. Fill boats with carrot, zucchini flesh and ham. Top with grated cheese.
Step 3 Bake for 30 minutes or until cheese is melted and zucchini is cooked through. Let cool 5 minutes. Serve with carrot sticks, cherry tomatoes and some crusty bread rolls.
