Full ingredients list:
- 1/4 cup salt-reduced soy sauce
- 1/2 cup water
- 4 tablespoons mirin
- 2 tablespoons sugar
- 1 tablespoon canola oil
- 3 x 150g chicken breasts, cut into 2cm pieces
- 3 tablespoons chopped fresh coriander
- 4 cups cooked jasmine rice, to serve

Instructions and steps:
Step 1 Place soy sauce, water, mirin and sugar into a small saucepan and stir over low heat until sugar dissolves. Bring to the boil, reduce heat, and simmer for 3 minutes. Set aside.
Step 2 Heat oil in a non-stick frying pan over high heat. Add chicken in batches. Cook for 2–3 minutes or until evenly browned.
Step 3 Return all of the chicken to frying pan. Add sauce. Cover. Cook over medium-low heat for 20-25 minutes or until chicken is tender. Stir in coriander. Serve with jasmine rice.
