Full ingredients list:
- 400g lamb mince
- 2 Weet-Bix, crushed
- 1 zucchini, trimmed, grated
- 1 small carrot, trimmed, grated
- 2 tablespoons fresh, finely chopped chives
- 1 egg
- 1/2 teaspoon olive oil
- hamburger buns and salad to serve (optional)

Instructions and steps:
Step 1 Preheat oven to 150C. Line a tray with baking paper. Combine mince, Weet-Bix, zucchini, carrot, chives and egg in a large bowl. Shape mixture into 4 large rissoles.
Step 2 Brush a large, non-stick frying pan with oil and heat over medium-high heat. Cook rissoles in batches for 3-4 minutes on each side or until browned.
Step 3 Arrange rissoles on tray and bake for 5-8 minutes or until cooked through. Serve in hamburger buns with salad or with a side salad.
