Full ingredients list:
- olive oil spray
- 1 onion, finely diced
- 250g lean beef or lamb mince
- 2 cups cooked lentils
- 100g pumpkin, cut into cubes
- 100g carrot, cut into cubes
- 100g broccoli, chopped
- 3 x 250g blocks frozen spinach
- 600g potatoes, cooked, mashed with 2 tablespoons reduced-fat spread and 1/4 cup (60ml) skim milk

Instructions and steps:
Step 1 Preheat oven to 180°C. Spray a large frying pan with oil. Fry onion over medium heat for 3-4 minutes until softened. Add mince. Brown for 3-4 minutes.
Step 2 Add lentils, vegetables and 1/4 cup (60ml) water. Cook for 10 minutes, stirring, until vegetables are tender and most liquid has evaporated.
Step 3 Spoon mixture into a 2-litre baking dish. Top with potato. Rake through with a fork to decorate. Bake 30 minutes or until golden.

For a vegetarian dish, omit the meat and add extra veggies. You can also add a cup of grated cheese to the topping, or use soy milk in place of skim.
