- 1 cup 90-second rice
- 400g can no-added-salt diced tomatoes
- 1 tablespoon Mexican seasoning
- 600g pre-prepared meatballs
- 1 avocado, flesh mashed with a squeeze of lemon juice

Instructions and steps:
Step 1 Cook rice according to packet instructions.
Step 2 Meanwhile, bring tomatoes and seasoning to the boil in a large frying pan. Add meatballs and cook for 10 minutes over medium heat until cooked through.
Step 3 Serve on rice with avocado.
Pre-prepared meatballs are available from butchers and supermarkets - the cooking time for this dish will vary according to their size.
