Peppered steaks with caramelised onions

Full ingredients list:
3 medium potatoes, chopped into bite-sized pieces
3 zucchinis, chopped
2 large sprigs rosemary
2 tablespoons olive oil
2 red onions, thinly sliced
1 tablespoon white wine vinegar
1 teaspoon caster sugar
4 x 150g sirloin steaks, fat trimmed

Instructions and steps:
Step 1 Preheat oven to 190°C. Place potatoes, zucchinis and rosemary into a large baking dish and drizzle with 1 tablespoon oil. Season with pepper, then roast for 40 minutes or until golden and tender.
Step 2 Meanwhile, heat remaining tablespoon of oil in a large frying pan. Add onions and fry over low heat for 15-20 minutes until soft and golden. Add vinegar and sugar and fry for 5 minutes until soft and melting. Tip into a dish and keep warm.
Step 3 Season steaks with freshly ground pepper, add to pan and fry over high heat for 2-3 minutes on each side. To serve, divide potato mixture among four plates, place one steak on each plate and top with a spoonful of onions.
