One-bowl banana and walnut loaf

Full ingredients list:
cooking oil spray
2 cups self-raising flour
1 teaspoon bicarbonate of soda
1 1/2 teaspoons ground cinnamon
2/3 cup caster sugar
3/4 cup walnut halves, chopped
1 cup skim milk
1 tablespoon extra light olive oil
2 large bananas, mashed

Instructions and steps:
Step 1 Preheat oven to 180ÂºC (160ÂºC fan-forced). Grease an 11 x 21cm loaf pan with cooking oil spray. Line base and long sides with baking paper, allowing it to overhang.
Step 2 Combine flour, soda, cinnamon, sugar and walnuts in a large bowl. Stir in milk, eggs, oil and bananas until just combined.
Step 3 Spoon into prepared pan. Smooth surface. Bake for about 50 minutes or until a skewer inserted into the centre comes out clean. Stand in pan for 5 minutes. Turn out onto a wire rack to cool.
