Herby frittata with asparagus and cheddar

Full ingredients list:
- 6 eggs
- 1 cup cubed sweet potato, cooked
- 1 cup chopped mixed herbs, such as coriander, basil and parsley
- 1 cup grated cheddar, loosely packed
- 1/2 teaspoon olive oil
- 1 bunch asparagus, sliced
- side salad, to serve
- 4 slices crusty bread, to serve

Instructions and steps:
Step 1 Preheat grill on high. Whisk eggs in a bowl. Add sweet potato, herbs and half the cheese. Season with freshly ground black pepper.
Step 2 Heat the oil in a large frying pan over high heat. Add the asparagus and cook, stirring, for 1 minute or until asparagus starts to colour. Reduce heat to low and pour in the egg mixture. Cook for 5-6 minutes or until frittata is set around the edge but still runny in the middle.
Step 3 Sprinkle remaining cheese over frittata, then place frying pan under the grill for 3-5 minutes until top is golden and frittata is cooked through. Serve with salad and crusty bread on the side.
Replace the cheddar with crumbled low-fat ricotta or feta.
