- 3 medium vine-ripened tomatoes, quartered
- cooking oil spray
- 30g baby rocket leaves
- 1/3 cup balsamic vinegar
- 80g reduced-fat feta, crumbled

Instructions and steps:
Step 1 Preheat a chargrill or barbecue grill on high. Spray tomatoes with cooking oil. Grill for 1 minute each side or until brown.
Step 2 Place rocket onto a large serving plate. Top with tomatoes and drizzle with vinegar. Top with feta and serve.
