Full ingredients list:
cooking oil spray
2/3 cup vegetable oil
1/2 cup firmly packed brown sugar
2 cups self-raising flour
1 teaspoon ground cinnamon or mixed spice
1 teaspoon bicarbonate soda
2 large granny smith apples, peeled, cored and coarsely grated
1/3 cup sultanas, chopped
icing sugar mixture (optional)

Instructions and steps:
Step 1 Preheat oven to 180ºC. Spray a 20cm round cake pan with cooking oil. Line base and side with non-stick baking paper.
Step 2 Use an electric beater to beat together oil, sugar and eggs in a large bowl until well combined. Stir in combined sifted flour, cinnamon and bicarbonate of soda. Use a large metal spoon to gently fold through the apple and sultanas until just combined.
Step 3 Spoon mixture into prepared pan and smooth surface. Bake for about 45 minutes or until a skewer inserted into the centre comes out clean.
Step 4 Remove from oven and set aside for 5 minutes. Remove from pan and transfer to a wire rack to cool. Dust with icing sugar, if using. Cut into wedges and serve.
