- 750g desiree potatoes, sliced
- olive oil spray
- 8 lamb leg steaks or lamb leg chops
- 2 lemons
- 1 packet vine-ripened cherry tomatoes (or punnet cherry tomatoes)
- mint jelly

Instructions and steps:
Step 1 Preheat oven to 220°C. Line a roasting pan with baking paper. Arrange potatoes in the pan, overlapping slightly. Spray with oil. Bake for 35 minutes.
Step 2 Place lamb steaks onto potatoes and spray with oil. Cut 1 lemon in half and squeeze juice over steaks. Slice remaining lemon and add slices to roasting pan.
Step 3 Line a baking tray with baking paper. Place tomatoes onto tray and spray with olive oil.
Step 4 Place both trays in oven and bake for 20âˆ'25 minutes or until steaks are cooked to your liking. Place potatoes and steaks onto serving plates with lemon slices. Serve with roasted tomatoes on the side. Top steaks with a dollop of mint jelly.
