- 2 cups self-raising flour
- 1/2 cup brown sugar
- 3 small overripe bananas, mashed
- 3 fresh dates, halved, deseeded and finely chopped
- 2 eggs, lightly beaten
- 3/4 cup skim milk

Instructions and steps:
Step 1 Preheat oven to 180°C. Spray an 11x21cm non-stick loaf pan with oil. Line base and 2 long sides with non-stick baking paper, allowing it to overhang slightly.
Step 2 Combine the flour and sugar in a large bowl. Add the banana, dates, egg and milk and stir until well combined. Spoon into prepared pan.
Step 3 Bake for 45 minutes or until a skewer inserted into the centre comes out clean. Remove from oven. Turn out onto a wire rack to cool. Cut into slices to serve.
